BENEFICIO: Our coffee is carefully hand-harvested, ensuring only ripe cherries are chosen. These precious cherries are then left to rest for 24 hours, heightening the rich flavors inside. Following this period of repose, the cherries are delicately pulped and allowed to continue their fermentation journey for another 24 hours. To finish the process, the coffee beans are washed clean and sun-dried, bringing about a masterpiece of taste and aroma. Flor shares
For Flor María López, coffee production is not merely a business but a culture and tradition deeply rooted in her heart. Raised in a family of coffee growers, coffee has always been her calling. Together with her husband Humberto Antonio Monroy, they have been immersed in the art of coffee production for over 45 years. However, it was only in 2006, when they purchased their own plantation, La Milagrosa, that they began crafting their own coffee. Coffee is no longer just their main source of income; it has become their passion, a legacy they intend to pass onto future generations. Their eldest son, Milton, is a testament to this legacy. He inherited this passion and is now an enthusiastic coffee producer himself, eager to innovate. In addition to owning his own plantation, he continues to support his parents in production activities, always striving to enhance the quality of their coffee. "My eldest son, Milton, is my right hand on the farm. He is our partner, our advisor, and our guide to producing better coffee harvest after harvest," Flor shares.
"For me, doing things right and maintaining high standards has always been a priority in everything I do. To produce specialty coffee, you need dedication, patience, and a lot of effort, but it's worth it. Our life has changed for the better because we're now much more profitable. We feel happy and proud," Flor articulates, a twinkle of satisfaction in her eyes. "I am fortunate to have a productive farm, and it's wonderful to see the efforts of an entire family bear fruit."
Flor María owns a house in the city of Ibagué, and now that she is reaching a more advanced age, she spends more time there. Yet, her heart remains in the rich, aromatic soil of La Milagrosa, a testament to a life devoted to the art of coffee.
